It's a pretty good simulation, well done.

I was wondering if there is some way of capturing a real turbulence
function over some period of time?. You would need something like the
same star in the same part of the sky at the same time, once with
turbulent conditions and again with perfect seeing. It my then be
possible to deconvolve the turbulence function out of the two runs.
