Just made analysis of density of honey. I will confine these
numbers exclusively to commercial honey stated to be from
clover and purchased in the late Summer 2009:

"organic" California clover honey: 1.27 g/cm^3
Luneberyg, DE clover honey: 1.67 g/cm^3

I have no reason to believe this covers the full spectrum
of clover honey, nor have I even touched issue of seasons
or other types of honey that are also commercially
available. No way to know what type of bees for these
two honeys.

As a sidenote, the CA honey that poured more quickly has
small crunchy crystals whereas the higher density
German honey was thick and pasty, but no sense of
crystals. Interesting, but hopelessly off topic.

I argue that density of honey purchased directly in the
grocery store can and does vary approximately to the extent
I first mentioned, at least for global shoppers. Maybe
honey in USA is more homogeneous, but you can likely
find honey from outside USA. I suspect wax we have
collectively been using for polishing also varies considerably
and have been told that it does vary by the people at the
Swedish beekeepers association (Svenska Biodlares
Riksforbund, http://www.biodlarna.se/website1/1.0.1.0/2/1/).
